David's Recipe for Zchuk
In my experience, 'authentic' zchuk is always made with dried peppers. This one, made with fresh peppers, is milder in taste and different in texture. But necessity is the mother of invention, isn't it?
Condiment, Yemenite Jewish

- 2 cups slices from seeded hot green peppers
- 1 soup spoon olive oil
- 1 soup spoon lemon juice
- 1/4 coffee spoon salt
- 1/2 coffee spoon freshly ground black pepper
- Pinch of cumin
- Freshly ground seeds from 2 cardamom pods
- Blend all of the ingredients in a blender until almost smooth, about 1 minute.
- That's it!
